Macadamia nuts have long been a popular ingredient used by The French Laundry’s pastry team. These jumbo Hawaiian nuts are first roasted and caramelized. They are coated in 40% Valrhona Jivara milk chocolate, followed by a layer of delicately crunchy feuilletine flakes, and a coat of 70% Valrhona Guanaja dark chocolate. The finale—the macadamia nuts are rolled in couverture chocolate powder.
