Developed by Chef Keller in collaboration with Cangshan, these full tang, straight-edge steak knives were designed with fine-grained Swedish Sandvik® 14C28N Steel for incredible durability, stain resistance and exceptional edge retention. A 2017 Housewares Design Award Finalist, the patented knife design focuses on remarkable balance and an ergonomic handle that provides a comfortable and secure grip. A meticulous six stage ULTRA6 heat treatment process increases hardness and strength to allow for maximum initial sharpness of the hand-sharpened 16° Asian style cutting edge. These are the same knives used in Chef Keller’s The Surf Club Restaurant in Surfside, FL. A Set of four knives comes in a Finesse embossed Walnut Box.
